I like potatoes. I don't mean with sour cream, cheese, bacon bits and all that. Just a baked potato, a little butter, some salt and that's it. I like the skin on them. Nice crispy skin, fluffy interior....mmmmm. That's why I don't peel them. Any of them. If I'm making roast and potatoes, I get those little ones about the size of a golf ball that have really thin skins and just throw them in. Fries ? Skin on. Mashed ? Skin on....and I don't do garlic and all that other stuff. ANY way I make them, it's skin on.
Potato. Butter. Salt.
I've seen people put chili over a baked potato and that's just wrong.
I do the same thing with carrots. They don't need all the brown sugar or other crap and who ever thought up the "traditional" marshmallows on top of sweet potatoes should be shot. They call them SWEET potatoes for a reason, they don't need all that extra sugar.
So....skin on or off ?
